BEET & GOAT CHEESE SALAD
With summer within reach, I find myself looking for lighter recipes and side dishes, especially salads. Salads are an easy way to get leafy greens into your daily routine and don’t weigh you down. This Beet and Goat Cheese Salad is one of my favorites.

BLUEBERRY PANCAKES
Blueberry Pancakes AND Hall & Oates. That is our Sunday morning tradition. This is a go-to meal that our entire family LOVES! Not entirely sure why Hall & Oates became our music of choice but does it really matter? It’s Hall & Oates!!
SIMPLE GRANOLA
I love granola. LOVE IT! It’s crunchy, sweet, and healthy, right? I thought it was until I looked at the label of what I was eating. Until I saw how much fat and sugar was is in it. Good gravy! Not nearly as healthy as I thought. With that, I stopped buying it for years.
SPINACH GREEK YOGURT
A few years ago I wanted to get more leafy greens into my diet so I looked up some green smoothie recipes and it turns out they are stinkin’ delicious! Especially with pineapple and oranges? So good! But that’s a recipe for a different day.
