CHOCOLATE CHIP WAFFLES

A few weeks ago we celebrated International Waffle Day. We made Cornmeal Waffles (find the recipe HERE) and Chocolate Chip Waffles for a fabulous “brinner”.

The Chocolate Chip Waffles are always a huge hit and have a very special place in my kids’ hearts. This is a dish my mother-in-law would make for our kids when they would have a sleepover with their Grandma. She would make Chocolate Chip Waffles, bacon, sausage, and fresh fruit, and our “kiddo-Q’s” would hang out with her and eat a large, delicious breakfast with one of the most important people in our lives.

In March of 2020, we lost my mother-in-law to cancer. She was (and still is) a big part of our lives. She had a way of making people feel loved and cared for, kind of a mom to everyone she met. Oftentimes, she did this with food. Whether she was bringing you a meal to make life easier after the passing of a loved one or stocking your refrigerator with the essentials before you got home from vacation so you could just relax after your travels, my mother-in-law let you know that you were on her mind. And she was an amazing cook! If you were fortunate enough to get one of those meals, you were in for a treat!

She was a true maker of memories (MOM) and all that knew her have wonderful memories that she is responsible for making.

With her passing, my husband and I decided the best way to honor her memory is to carry on that piece of her within our own lives. Doing things like baking goodies for our loved ones during the pandemic or dropping off meals for those who are going through a hard time. Or surprising loved ones by driving an hour plus to drop off Mothers’ Day or Christmas gifts and spending some time catching up - six feet apart in a driveway, usually. We want the people we care for to know they are loved, not just by our words, but by our actions.

I know that may seem like a deep meaning for some Chocolate Chip Waffles, but that is what these mean to our family.

So, please enjoy the below recipe and make them for the ones you love most.


RECIPE

INGREDIENTS:

  • 2 Cups AP Flour

  • 1 Tablespoon Baking Powder

  • 1/2 teaspoon Salt

  • 1 1/2 Cup Milk

  • 2 Egg Yolks

  • 1/4 Cup Sugar

  • 1 Tablespoon Vanilla Extract

  • 1 Stick of Butter, melted

  • 4 Egg Whites

  • 1 Cup Mini Chocolate Chips


PROCESS

STEP 1:

Whisk two egg yolks, milk, vanilla extract, and sugar until thoroughly combined.

STEP 2:

In a separate bowl, mix flour, salt, and baking powder until combined.

Mix dry ingredients and wet ingredients together. The mixture will be quite lumpy.

STEP 3:

Add melted butter

Gently mix the butter into the mixture until combined. You don’t want to overwork it. The mixture should still be lumpy.

STEP 4:

Whisk 4 egg whites until stiff peaks form.

Gently fold egg whites into the mixture until fully combined.

STEP 5:

Add Mini Chocolate Chips to batter and gently fold in. We are using a Cup or so - but feel free to add a little more.

STEP 6:

To bake, I set my waffle baker to 300°. Add one heaping 1/2 cup of the mix and bake each waffle for 3 minutes. All waffle bakers are different, so follow the instructions in your user guide.

Once baked, keep them warm in your oven (had mine set to 170°) on a wire rack until you serve them.

These can be kept refrigerated in an air-tight container for up to a week or freeze for up to three months.
