GARLIC CAULIFLOWER

In my never-ending quest to find ways to combat the symptom of menopause, I look for, among other things, foods and recipes. While I have often overlooked Cauliflower in the produce section, it is a powerhouse in several ways:

  1. It is filling and low calorie

  2. It may help prevent cancer*

  3. Helps to protect cell damage*

  4. Cauliflower is full of nutrients like calcium and folic acid to help support bone health**

  5. It’s relatively inexpensive

  6. Oh, and it’s delicious!

This recipe is as easy as they come - just the way I like it. Four ingredients and some time are all it takes.


RECIPE

INGREDIENTS:

  • 1 Head of Cauliflower

  • 3 Tablespoons Extra Virgin Olive Oil

  • 5 Cloves of Garlic

  • Kosher Salt


PROCESS

STEP 1:

Chop up cauliflower into (somewhat) uniform chunks, rinse, and drain thoroughly.

Spread out onto a large, rimmed baking sheet.

STEP 2:

Roughly chop garlic and add to Extra Virgin Olive Oil. I used five medium-sized cloves of garlic for this.

Use less garlic or more depending on your taste - it is 100% up to you.

STEP 3:

Pour olive oil and garlic mixture over the cauliflower and toss to coat. Sprinkle with Kosher Salt.

Bake at 425° for 40 - 45 minutes, tossing once about 30 minutes into baking.

The garlic and cauliflower get nice and brown and slightly crispy. I love the texture and the crispy garlic really makes this one of my favorites.

I have also tried this with a little Parmesan and lemon zest over the top and it was great! This is another one of those recipes that you can dress up or down depending on your taste.
